The manufacture of ammonium caseinates is very similar to that of sodium caseinate, although, in the case of ammonium caseinate, a lot of the ammonia is evaporated from the solution during the drying process. A solution of sodium caseinate, like those of ammonium caseinates, has a straw-like colour and is completely different in appearance from milk.
